Cooking Instructions
Create an assembly line for your coating. In one rimmed sheet pan (or 9×13 will do), combine all dry ingredients for the chicken together. In a second pan, combine eggs and oatmilk together. In a third pan, combine your cornflakes together. Remove the chicken tenders from the breast (so everything fries evenly) and dredge in the spiced flour mixture, followed by egg mixture, & finally in the cornflake mixture.
Fry in avocado oil until golden and crusty on both sides (place a carrot into the oil when cooking, to prevent burning). Transfer chicken to a wire rack on a baking sheet and finish in a 400℉ oven for about 10 minutes (or when chicken hits 150℉ inside).
Add all ingredients together for the sauce and microwave for 1.5 minutes. Stir to combine.
Make waffles as per box or mix.
Place chicken onto a waffle and pour sauce over chicken & enjoy! (Optional, you can place another waffle over your chicken to create a sandwich).
