- 1 package @jacksgourmet beef merguez
- 1 package of fairy tale eggplants or 1 small/medium eggplant
- 1 bunch cilantro
- 1 baguette or ciabatta loaf
For the eggplant:
- 1 tbsp cumin
- 1 tbsp granulated garlic
- 1/2 tbsp turmeric
- 1/2 tbsp smoked paprika
- 1/2 tbsp salt
- 1/4 tbsp white pepper
- 2 tbsp oil
For the harissa tahini:
- 2 tbsp @mina harissa (it’s a red pepper paste, I used the mild)
- 2 tbsp tahini
- 1 tbsp water
- 2 tbsp ice
- 1 tsp date syrup
- 1 tsp salt

This is one of the best sandwiches I’ve eaten in my entire life! The harissa tahini is my new favorite condiment. It’s like if “special sauce” were actually special. The beef merguez are tender and robustly flavored, the eggplant adds creaminess without being overly wet and the toasted bread adds a great crunch, while also absorbing the harissa tahini. Honestly, it’s been day since I made this, and I still want it again. Don’t ignore the packaged sausage section; they are an easy way to add flavorful protein with minimal work.
Cooking Instructions
Eggplant
Combine all spices into a bowl. Mix then set aside. Slice the top off the fairy tale eggplants then slice them in half the long way. Add the eggplant to a plastic bag and add 2 tbsp of the rub and the oil. Shake to combine and let sit for 30 minutes to marinate.
Tahini
Combine all ingredients to a large measuring cup. Use an immersion blender to unify the mixture. You want this to be thick & creamy, but still pourable. Add more water to thin or more tahini to thicken.
Sandwich
Add your eggplant and merguez to the grill, and cover. Oil some crusty bread and place face down on the grill to toast on each side (watch the bread carefully). After 5 minutes uncover and remove the merguez as it is cooked. Flip the eggplant and give it another minute or two.
Remove all items from the grill and build your sandwich! Bread, drizzle harissa tahini, eggplants, a few merguez, cilantro, another drizzle of harissa tahini, and top with bread. Then cut it in half, give it a dip, and enter sandwich heaven… enjoy!
