Ingredients:
- 1.5lbs @thecedarmarket Baby Kolichol (shank)
- 1 Bottle of beer (any beer besides an IPA)
- 1 large onion, sliced
- 3 tbsp @thecedarmarket Kickin’ Maple Honey Rub

Cooking Instructions
Sear the kolichol in a Dutch oven, 2 minutes per side. Remove from pot and then add your onions, 1 tbsp of the rub and 1/2 cup of beer. Let the onions get soft and start to brown, then add the kolichol back in, and dust it with 2 tbsp of the rub, and add the remainder of the beer. Bring everything to a simmer then cover and transfer to a 275℉ oven for 3.5-4 hours.
Remove & transfer to a bowl to shred. You can use an immersion blender to blend the braising liquid into a thicker sauce, or if you like the caramelized onions just pour it in as is.
