Stuffed Capons with Jeweled Rice

Ingredient List:

  • 2 pkgs @thecedarmarket capons
  • 2 cups rice, cooked per package instructions
  • 1 cup dried fruit (I used apricots, prunes and cherries)
  • 1 large leek, minced
  • 1/4 cup date syrup
  • 2 tbsp @realdeal.foods date sweetened tamarind oot
  • 1 egg
  • 1 tbsp salt

The holidays are a time when families gather, feasts are served, and to make the meal feel as special as the day deserves, we often feel pressure to buy expensive proteins. Well, I’m here to say that chicken can feel special too! It doesn’t have to cost a fortune or take hours of effort. These capons are juicy, tender, and cooked in 20 minutes. With crisp skin, and a sweet & sour jeweled rice filling packed with simanim and dried fruit, you’ll feel every bit of the Rosh Hashana spirit.

Cooking Instructions

Cook your rice, as per package instructions. While the rice cooks, sauté your leeks and chop your dried fruit.

Once the rice is done, mix the leeks, dried fruit, date syrup and egg together (do this while the rice is warm, to cook the egg), and season with salt.

Spread your capons open and stuff with about 2 tbsp of filling and fold closed. You can roast just like that, seam side down, or tie it with butcher’s twine for a more composed look.

Pour the oot over the top and roast at 500℉ oven for around 20 minutes or until the top is nicely browned and the skin crisp.

To serve, add remaining filling to a platter and top with your capons.
