For the nuggets:
- 2 lbs @thecedarmarket ground chicken breast
- 12 oz @mealmart chuck pastrami
- 2 extra large eggs
- 2/3 cup panko + 1 cup for exterior coating
- 3 tsp salt
- 2 tsp granulated garlic powder
- 2 tsp granulated onion powder
- 1 tsp white pepper
- 2 tbsp oil for the sheet pan

These are McDonald style nuggets… only you know, better! I mean, they have pastrami inside them, INSIDE! Also, you don’t need to fry em and you can make 40 at a time, which is kind of important when you have a bunch of hungry guests who want to eat finger food while they watch football.
Cooking Instructions
Add your ground chicken, panko crumbs, eggs and spices to a bowl.
Chop the pastrami with a knife or in a food processor. Then pour into your bowl and mix to combine.
Form into nuggets and press into the panko crumbs on all sides. Transfer to an oiled sheet pan and bake at 475–500°F for 25–30 minutes. TIP: If you want them extra crispy, flip over and cook another 3–5 minutes on the second side.
While the nuggets cook, combine all sauce ingredients and microwave for 2 minutes until sauce is warm and pourable.
Plate & enjoy!
For the dipping sauce:
- 3 tbsp apricot jam
- 1 tbsp soy sauce
- 1 tbsp rice wine vinegar
- 3 cloves crushed garlic
- 2 tsp sriracha sauce
